Fesko Farms, a 1500-acre dairy farm in Skaneateles, N.Y., is home to 800 cows and eight employees. The result of increasing dairy and land prices over the past few decades, the property is a conglomeration of 29 farms, which now are under one enterprise. The proprietor, Chris Fesko, acts as the mother figure to the employees, some of whom have worked at the farm since they were children. The cows, kept on a strict diet, are milked twice daily rather than the usual three times daily. The majority of the farm's property is devoted to corn to feed the cows throughout the year, allowing the farm to sustain itself through virtual subsistence.
