I Cut Fish

Rosemary Clift has been cutting fish at Doug's Fish Fry in Skaneateles, N.Y. for 15 years. She stands at her fish-cutting station 8-to-10 hours a day, five days a week, hand-cutting thousands of pounds of fish each year. Rosemary labors behind the scenes to supply the endless droves of hungry Doug's diners. Her efforts go largely unnoticed but without her, there would be no fish dinner.
